1 Tbspunsalted butter

1 lgyellow onion

1 clovegarlic, minced

1/2 smgreen bell pepper

1 mdstalk celery, choppedd fine

2 Tbspa. p. flour

16 ozcrushed tomatoes

8 ozchicken broth
-
1/4 tsphot sauce
-
1 cthawed sliced okra, or more to taste

1 1/2 ccooked chicken, cubed

1/2 tsplemon juice
How To Make quick and easy chicken gumbo

1In a large heavy saucepan over medium heat, melt butter. Add onion, garlic, bell pepper and celery. Saute for 5 minutes or until softened.

2Blend in flour and cook, stirring for approx. 3 minutes. Slowly stir in tomatoes and broth and then add hot pepper sauce.

3Bring to a boil until mixture thickens, about 3 minutes. Add thawed okra and return mixture to a boil - then reduce heat and simmer another 6 minutes. Add cooked chicken and stir until warmed; stirring occasionally. Stir in lemon juice and mix well -- serve over rice.
