I am catering a graduation/anniversary party this weekend and needed to come up with a chicken sandwich. This is that result. Add more cayenne if you like it bitey, like my family does. This is the toned down version I will be serving this weekend. 6/28/11 - I just realized that the seasonings I used were the same seasonings I use when making Emeril's Pulled Pork. Well Emeril, it works well with chicken too!

Ingredients For pulled chicken sandwiches

3 lbrotisserie chicken, shredded

1 canchicken broth

1 Tbspemeril's creole seasoning

1 Tbspbrown sugar

1/2 Tbspground cumin

1/2 Tbsppaprika, sweet mild

1/2 Tbspcoarse ground black pepper

1/2 tspcayenne pepper, or more to taste

1/2 Tbspsalt

6kaiser rolls
How To Make pulled chicken sandwiches

1Combine chicken broth, creole seasoning, brown sugar, cumin, paprika, pepper, cayenne pepper, and salt.

2Place shredded chicken in a crockpot. Pour chicken broth mixture over chicken. Cook on lowest setting (Warm on my crockpot) until hot throughout. Serve on kaiser rolls.
