This is a great way to bake a really flavorful, juicy chicken. I saw a recipe that coated the bird in mayonnaise, and I thought I could do better than that. After 3 tries, I came up with this. So, you ready… Let’s get into the kitchen.

3 - 4 lbwhole chicken

1 mdorange, cut into quarters

2 - 3 qtfiltered cold water

3 Tbspsalt, kosher variety, fine grind
- THE SAUCE

3 Tbspmayonnaise, plain variety

1 Tbspsmooth brown mustard, i prefer grey poupon

1/4 tspsalt, kosher variety, fine grind

1/4 tspwhite pepper, freshly ground

1/4 tsppaprika, smoked, if you have some

1PREP/PREPARE

2Gather your ingredients (mise en place).

3Dissolve the salt in the water, add the chicken, and allow to brine in the fridge for 2 hours, but no longer than 3.

4While the chicken is brining, mix together the ingredients for the sauce.

5Place a rack in the bottom position and preheat the oven to 350f (175c).

6Remove from the brine, rinse, and place on a rimmed, parchment-lined baking sheet, fitted with a wire rack.

7Coat the inside of the bird with 1 tablespoon of the sauce and add the orange quarters. Then rub the remainder of the sauce on the outside of the chicken.

8Place into the preheated oven, and cook until the juices run clear, or an instant-read thermometer shows 185f (85c), about 1 to 1 1/2 hours.
