This is a great way to bake a really flavorful, juicy chicken. I saw a recipe that coated the bird in mayonnaise, and I thought I could do better than that. After 3 tries, I came up with this. So, you ready… Let’s get into the kitchen.

  • PLAN/PURCHASE
  • THE CHICKEN AND BRINE
  • 3 - 4 lb
    whole chicken
  • 1 md
    orange, cut into quarters
  • 2 - 3 qt
    filtered cold water
  • 3 Tbsp
    salt, kosher variety, fine grind
  • THE SAUCE
  • 3 Tbsp
    mayonnaise, plain variety
  • 1 Tbsp
    smooth brown mustard, i prefer grey poupon
  • 1/4 tsp
    salt, kosher variety, fine grind
  • 1/4 tsp
    white pepper, freshly ground
  • 1/4 tsp
    paprika, smoked, if you have some

How To Make poultry essentials: yummy flavorful baked chicken

    Gather your ingredients (mise en place).
  • 3
    Dissolve the salt in the water, add the chicken, and allow to brine in the fridge for 2 hours, but no longer than 3.
  • 4
    While the chicken is brining, mix together the ingredients for the sauce.
  • 5
    Place a rack in the bottom position and preheat the oven to 350f (175c).
  • 6
    Remove from the brine, rinse, and place on a rimmed, parchment-lined baking sheet, fitted with a wire rack.

    Coat the inside of the bird with 1 tablespoon of the sauce and add the orange quarters. Then rub the remainder of the sauce on the outside of the chicken.

    Place into the preheated oven, and cook until the juices run clear, or an instant-read thermometer shows 185f (85c), about 1 to 1 1/2 hours.
