I love sweet and sour recipes; they give you so many levels of flavor. This recipe is for sweet and sour chicken, and can be ready in 2.5 hours. If you would rather do this in your slow cooker, set it to low for about 7 hours, and you will have yummy chicken. I think it is a must that it be served over a nice warm pile of long-grained white rice. So, you ready… Let’s get into the kitchen.

4 Tbspsweet butter, unsalted

4 Tbsptomato paste

1/2 capple cider vinegar

3/4 ccoconut sugar

3 Tbspworcestershire sauce

2 clovegarlic, minced

salt, kosher variety, to taste

white pepper, freshly ground, to taste

1-1/2 cchicken stock, not broth

4 lgchicken breasts, boneless, skinless, cut into bite-sized pieces

8 ozpineapple chunks

1/2 mdred bell pepper, cut into strips

1PREP/PREPARE

2Gather your Ingredients (mise en place).

3Place a rack in the bottom position, and preheat the oven to 325f (160c).

4Add the butter, tomato paste, vinegar, coconut sugar, Worcestershire sauce, garlic, salt, pepper, and chicken stock to an ovenproof pot.

5Slowly bring up to the simmer.

6Add the chicken, and combine.

7Cover, and place into the oven, and bake until the chicken is cooked through, about 2 hours.

8Add the pineapple, and red pepper to the pot, return to the oven, and continue to bake for an additional 20 minutes.
