I love sweet and sour recipes; they give you so many levels of flavor. This recipe is for sweet and sour chicken, and can be ready in 2.5 hours. If you would rather do this in your slow cooker, set it to low for about 7 hours, and you will have yummy chicken. I think it is a must that it be served over a nice warm pile of long-grained white rice. So, you ready… Let’s get into the kitchen.

Ingredients For poultry essentials: sweet/sour chicken

  • PLAN/PURCHASE
  • 4 Tbsp
    sweet butter, unsalted
  • 4 Tbsp
    tomato paste
  • 1/2 c
    apple cider vinegar
  • 3/4 c
    coconut sugar
  • 3 Tbsp
    worcestershire sauce
  • 2 clove
    garlic, minced
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste
  • 1-1/2 c
    chicken stock, not broth
  • 4 lg
    chicken breasts, boneless, skinless, cut into bite-sized pieces
  • 8 oz
    pineapple chunks
  • 1/2 md
    red bell pepper, cut into strips

    Gather your Ingredients (mise en place).

    Place a rack in the bottom position, and preheat the oven to 325f (160c).

    Add the butter, tomato paste, vinegar, coconut sugar, Worcestershire sauce, garlic, salt, pepper, and chicken stock to an ovenproof pot.

    Slowly bring up to the simmer.

    Add the chicken, and combine.

    Cover, and place into the oven, and bake until the chicken is cooked through, about 2 hours.

    Add the pineapple, and red pepper to the pot, return to the oven, and continue to bake for an additional 20 minutes.
