This is an easy/peasy dish to assemble with a minimum of fuss, and it can be on the table in 30 minutes. A simple, one-dish dinner, that will have your guests thinking you spent a whole lot more time on it than you did. So, you ready… Let’s get into the kitchen.

Ingredients For poultry essentials: salsa-braised chicken breasts

  • PLAN/PURCHASE
  • 16 oz
    green salsa, your favorite brand, or homemade
  • 2 md
    chicken breasts, boneless, skinless
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • 2 slice
    provolone cheese, or pepper jack
  • ADDITIONAL ITEMS
  • rice or potatoes for serving
  • 1 md
    lime, cut into wedges, for serving
  • OPTIOINAL ITEMS
  • cilantro, freshly chopped, for garnish

    Gather your Ingredients (mise en place).

    Place a rack in the middle position, and preheat the oven to 400f (205c).
  • 5
    Add the salsa to a baking dish, sprinkle both sides of the chicken breasts with salt and pepper, and then place in the dish with the salsa.

    Place the baking dish in the preheated oven for 15 – 20 minutes.

    Remove from the oven, and top the chicken with the provolone, or pepper jack cheese.

    Return to the oven, and continue bake until the chicken is cooked through, and the cheese is beginning to brown in spots, about 15 additional minutes.

    Plate with some rice, or potatoes (in my case I am using hash browns), and then finish by drizzling some of that yummy salsa on top. Add some chopped cilantro (if using), and a couple of lime wedges. Enjoy.
