poultry essentials: broccoli stuffed chicken

Yesterday I posted a recipe from my housekeeper’s daughter… that night the gardener decided she wanted to cook dinner, so she called up her mum, down in Florida to get this recipe. I backed off, let her do the cooking, and took a few photos. It was actually pretty good, and easy to make. So, you ready… Let’s get into the kitchen.

Ingredients For poultry essentials: broccoli stuffed chicken

  • PLAN/PURCHASE
  • 2 lg
    chicken breasts, skinless, boneless
  • 6 oz
    broccoli florets, frozen variety, chopped
  • 2 oz
    parmesan cheese, grated
  • 1 pinch
    garlic powder
  • 1 pinch
    onion powder
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • 1/4 c
    chicken stock, or water
  • OPTIONAL ITEMS
  • bacon or thinly sliced ham, for wrapping the breasts before baking
  • cherry tomatoes

How To Make poultry essentials: broccoli stuffed chicken

    You will need an ovenproof baking dish to make this recipe.

    Why Frozen Broccoli? With fresh broccoli we would need to steam it for a few minutes and allow it to cool before using. With frozen (thawed) broccoli we can skip that step and go straight to stuffing the chicken breasts.

    Gather your ingredients (mise en place).

    Place a rack in the middle position and preheat the oven to 350f (175c).
  • 6
    Chop the broccoli into small bits, and pat dry with a paper towel.
  • 7
    Add to a bowl, along with the grated parmesan cheese, garlic powder, onion powder, salt and pepper, then toss to combine.

    Use a sharp knife to cut a pocket into each one of the chicken breasts. Be careful not to cut all the way through.

    Add half the broccoli mix to each of the chicken breasts, and wrap with bacon or ham, if using.

    Add the chicken stock or water to a baking dish and add the chicken breasts. Then sprinkle a bit more salt and pepper on top. If you are using the cherry tomatoes, scatter them about the chicken (no photo for this one… my bad).

    Place into the preheated oven and bake until the internal temperature of the breasts reaches 165f (73c), about 18 – 22 minutes.
