Ingredients For portuguese lime chicken rice

  • marinade sauce first.
  • 1 Tbsp
    portuguese olive oil
  • 2 clove
    fresh garlic finely chopped
  • 1 tsp
    dried basil
  • pinch
    salt
  • 12 tsp
    pepper(either red flakes or black pepper.)
  • 4 oz
    boneless skinless chicken (breast half cut into bite size pieces.)
  • rice as follows
  • 2 Tbsp
    olive oil (divided)
  • 2 Tbsp
    finely chopped garlic
  • 1 lg
    onion chopped
  • 2
    jalapeno pepper(or red hot portuguese (fresh,seeded and chopped
  • 2
    peeled tomato (seeded and coarsely chopped)
  • 1 tsp
    turmeric,(powder)
  • 1 c
    white rice(uncooked)
  • 1 lg
    lime juice)
  • 2
    bay leaves
  • 1 c
    chicken stock
  • 12 c
    water
  • 3 Tbsp
    fresh chopped parseley

How To Make portuguese lime chicken rice

    Mix olive oil, garlic, basil,salt and pepper in a small bowl.. TOSS chicken in marinade,cover and refrigerate overnight.

    HEAT 1 tablespoon of olive oil,in a small saucepan over medium-high heat ;Cook chicken and set aside. Heat remaining 1 tablespoon of olive oil,and cook garlic and onion until translucent.

    STIR in jalapeno,chopped tomatoes,and salt,and turmeric;Cook for 2 minutes to soften tomato. STIR in the rice ,mixing thoroughly . STIR in half of the lime juice,bay leaves, chicken stock, water ,and cooked chicken. BRING to a boil reduce heat to LOW,then cover and simmer 25 minutes,stirring occasionally untilthe rice has cooked. REMOVE from heat , discard the bay leaves; stir in the remaining lime juice and parsley

    We all had extra limes for adding more juice to top it over rice and chicken WE all liked extra lime ,even add sliced lime on top of the dish, it looks very beautiful. Serve with a glass of white,wine goes very well. muito gosto (great taste)
