I raised 5 sons and a daughter plus more boys that were friends of my older sons who living on the streets or just over all the time..money was tight, so i was always on the lookout for recipes that were inexpensive. This one is something I made up..it has alot in it, and everyone loved it..probably because of the cheese on top!! Ha! To this day, my grown up children love this still and will come over for me to fry it up.These days it is just five of us here, so don't cook in large amounts. Still miss all the chatting around the stove however..

Ingredients For poor man's fried potato/veggies
-
1 lbhamburger/or chicken/or whatever meat you want

1 cchopped onion
-
1 cchopped red/green/yellow/orange bell peppers
-
1 ccorn
-
1 cfrozen/fresh peas
-
1 cchopped zucchini
-
1 cchopped summer squash
-
3 lbpotatoes/any kind you like, reds are great flavor
-
2 cgrated cheese, any kind, i use cheddar or montrey jack
-
2 Tbspbasil
-
2 Tbspparsley
-
2 Tbspsea, or kosher salt
-
1 Tbspblack pepper
-
1 Tbspred pepper seeds
-
1 Tbspthyme leaves
-
1/4 lbbutter for frying or use oil if not using cast iron
-
3eggs (optional)
-
1cream of celery soup or another cream soup
-
1 canmilk
How To Make poor man's fried potato/veggies

1I don't peel potatoes, so wash and cube them, placing them in the cast iron skillet. It cooks better. Otherwise if don't have it..use what you have on hand. Chop the onions and other veggies, and add them to potatoes. Be sure you cook this on medium heat..and stir it well every five minutes, so it wont stick. Be sure to add the butter and stir to spread it all over the food.

2In another skillet, start frying up the meat, if it is hamburger, keep chopping it up like taco meat size. If chicken, or other meat, chop it up small, or shred it..whichever you like. Ground turkey you will cook like the hamburger..

3Add the spices after ten minutes of cooking the meat. You will begin to smell them as them cook. Taste it here and there to be sure you have enough salt. Might need to add or decrease it as it suits you.

4Once the veggies are cook and the meat, combine the meat with the veggies and stir it well to make sure it is all mixed together.

5Break the eggs and beat them, place over the veggies, before the cheese is placed on top. Stir and turn the veggies so that the eggs get cooked through.

6Open can of "cream of celery" soup, or whichever cream soup you like. Add a can of milk to it and pour it all into the skillet and mix well. Turn the heat down some more, not low, but somewhere between.

7Grate the cheese and it on standby.Place it on top of the veggies when the creamed soup begins to bubble. Replace the top so it will melt..can stir it up to get it all through the veggies. Let it cook for 15 minutes and turn off burner.

8Supper is ready and will be good with cornbread, pan bread, or fresh baked bread. We make jalapeno bread sometimes and it adds the extra spice that is over the top. Real good..eat as just the main dish or add salad..
