This recipe is inspired by one of the newest menu items aboard the Carnival cruise ship, for their main dining room. POLLO PARMIGIANA DELLA CUCINA is described on the menu as a Boneless cutlet of chicken lightly breaded and gently fried, topped with marinara sauce and baked with mozzarella. This is my home version of that dish! I hope you enjoy it!

Ingredients For pollo parmigiana della cucina

  • 2-3 lg
    chicken breasts
  • canola oil
  • 2 cups flour
  • salt & pepper to taste
  • 6 slices fresh mozzarella
  • your favorite spaghetti sauce

How To Make pollo parmigiana della cucina

    Slice chicken breasts in half, through the center (butterfly style, but completely in half.)

    Pound chicken to 1/4 inch thickness with a mallet.

    heat a half inch or so of oil in a large skillet over medium-high heat.

    Put flour on a plate.

    dredge chicken in flour and brown in oil. When browned place each piece on a foil lined baking sheet.

    Salt and pepper each piece, both sides, then top with fresh mozzarella.

    Ladle a bit of your favorite marinara sauce over each piece.

    Bake in a 350 degree oven just until cheese is melted.

    Serve with a side of your favorite pasta!
