I had a recipe years ago when I was first married for Pineapple Chicken. I modified it slightly and have been preparing this recipe ever since. It's a hit with my family! When you're tired of the same chicken dishes, try this one! It's refreshingly different. Very good served with rice, and a sprinkle or two of soy sauce, if desired.

Ingredients For pineapple ginger chicken

3 lbchicken, cut up and skinless

1 cancrushed pineapple (in juice)

1 tspsoy sauce

2 Tbsponion (minced)

1/2 tspsalt

2 Tbsporange juice
-
2 tspcornstarch
-
1/8 tspginger (ground)
How To Make pineapple ginger chicken

1Preheat oven to 375 degrees.

2Mix together undrained pineapple, soy sauce, onion and salt. Pour over chicken in a prepared baking dish.

3Bake for 50-60 minutes, uncovered, basting halfway through cooking time and when removed from oven.

4Place chicken on platter and skim fat from pan.

5Mix together 1/2 cup pan juices, orange juice, cornstarch and ginger. Cook and stir until thickened.

6Serve over chicken.
