How To Make pineapple ginger chicken
-
1In a processor, place pineapple juice, ginger, coriander, parsley & lime juice. Pulse several times to purée. Strain out the solids & discard, reserving the juice.
-
2Add bacon fat in a pan, or fry bacon to render fat, then remove bacon pieces from pan. (NOTE: you will not necessarily need the bacon for this recipe, but you can sprinkle over the chicken as a garnish).
-
3In a bowl, mix the flour, cayenne & chili powder. Tenderize the chicken (you can use half breasts pounded into patties). Season with salt & pepper. Then lightly dredge the chicken in the dry flour mixture.
-
4Fry the chicken in bacon fat to brown on both sides. When almost completely browned, add slivered green pepper. Sauté until tender.
-
5Deglaze the pan with the white wine. Add butter & juices. Top each piece of chicken with a pineapple slice. Simmer until chicken is cooked through.
