Ingredients For pineapple chicken

4bone in skin on chicken thighs

salt and pepper

1 cpineapple juice

1/2 csoy sauce

1/2 cketchup
-
1/2 cdark brown sugar

1/4 cchicken stock
-
2 Tbspginger, minced
-
2 clovegarlic, minced

1 tspsesame oil
-
1 Tbspcornstarch
-
1 1/2 Tbspcold water

fresh pineapple chunks, to garnish

scallions, to garnish
How To Make pineapple chicken

1Season the chicken with salt and pepper and place in a baking dish. Preheat the oven to 375 degrees F.

2In a saucepan, add all the ingredients except the cornstarch, water, and garnishes. Cook for about 10 minutes. Mix the cornstarch and water together and add to the sauce once it is boiling to thicken.

3Pour the sauce over the chicken. Cover with foil and roast in the oven for 45 minutes. Remove the foil and bake another 10 minutes.

4Remove the chicken thighs to a plate and stir in the pineapple chunks. Serve the sauce over the chicken garnished with the scallions.
