Reminds me of Hawaii chicken. This is great over rice.

Ingredients For pineapple chicken

  • 4
    bone in skin on chicken thighs
  • salt and pepper
  • 1 c
    pineapple juice
  • 1/2 c
    soy sauce
  • 1/2 c
    ketchup
  • 1/2 c
    dark brown sugar
  • 1/4 c
    chicken stock
  • 2 Tbsp
    ginger, minced
  • 2 clove
    garlic, minced
  • 1 tsp
    sesame oil
  • 1 Tbsp
    cornstarch
  • 1 1/2 Tbsp
    cold water
  • fresh pineapple chunks, to garnish
  • scallions, to garnish

How To Make pineapple chicken

    Season the chicken with salt and pepper and place in a baking dish. Preheat the oven to 375 degrees F.

    In a saucepan, add all the ingredients except the cornstarch, water, and garnishes. Cook for about 10 minutes. Mix the cornstarch and water together and add to the sauce once it is boiling to thicken.

    Pour the sauce over the chicken. Cover with foil and roast in the oven for 45 minutes. Remove the foil and bake another 10 minutes.

    Remove the chicken thighs to a plate and stir in the pineapple chunks. Serve the sauce over the chicken garnished with the scallions.
