I got this recipe from Maui Electric consumer Services Dept years and years ago. Its good with a side of chow mein noodles. or rice. I make this for family get togethers and potlucks.

Ingredients For pineapple chicken

2 lbboneless chicken breasts

1/2 ccornstarch

1/4 tspsalt

1/2 tspshoyu sauce (soy sauce)

2 coil for frying

1 can(13 1/4 oz) pineapple chunks

3/4 cpineapple juice

2 Tbspbrown sugar
-
1/3 ccatsup
-
dashhot pepper sauce
-
1 1/2 Tbspcornstarch
-
2 Tbspwater
-
1/2 ccubed green peppers
-
1/2 csliced carrots
How To Make pineapple chicken

1Cut chicken into 1-inch pieces. Mix with cornstarch, 1/2 teaspoon salt,egg and shoyu sauce. In a wok, heat oil to 375*. Fry chicken until golden brown; drain on paper towels. Drain pineapple chunks, reserving liquid. In a saucepan, combine reserved liquid with the juice , the remaining 1/4 teaspoon salt, brown sugar, catsup,and hot pepper sauce; bring to a boil. Mix the cornstarch with water; stir into hot mixture. Cook until mixture thickens, stirring constantly. Add the pineapple chunks,green pepper, carrots and the chicken. Cook gently 2-3 minutes.
