Ingredients For pimiento chicken

4 Tbspbutter

1chicken, cut up

1 tspsalt
-
1/2 tsppaprika
-
mushrooms, sliced

2 Tbspflour
-
1 smonion, chopped
-
2 cchicken broth
-
1/2 chalf & half
-
1 jarpimientos (4 oz), chopped

1 Tbspparsley, chopped

hot cooked noodles
How To Make pimiento chicken

1Heat butter in heavy skillet. Add chicken, sprinkle with salt and paprika, and brown on both sides. Lower heat, add mushrooms, and saute about 5 minutes.

2Stir in onions. In a small bowl, mix flour with small amount of broth, stir till smooth. Add flour and broth to chicken in pan. Bring to a boil. Lower heat and simmer, covered, 30 minutes.

3Stir in the cream, pimientos, and parsley, and simmer 5 minutes more. (*Nuts...i forgot the parsley)

4Stir and serve, ladling sauce over chicken.

5Good served over hot noodles. I like to serve green peas on the side, which go nicely with the mushroom cream sauce..
