When we decided a while back to move south, I started reading up on Southern cooking and absolutely fell in LOVE with Southern favorites. My husband often enjoyed the new types of recipes I tried, but always asked for the same old PA Dutch favorites that were so traditional to our upbringing. BUT NOW... he asks when the next new recipe is coming!! YAY! Of all of the things I've tried, this is the one he asks for the most :-)

Pimento cheese is a Southern staple. Stuff it inside a chicken breast and you have a delicious and easy stuffed chicken recipe. Cut into the juicy and tender chicken, and the cheesy center oozes out. We love the crunchy Panko outer layer. So much yumminess!

Ingredients For pimento cheese stuffed chicken

4boneless, skinless chicken breasts

1 tspsalt

1/2 tsppepper
-
1/2 cmilk
-
1 lgegg
-
1 1/2 cPanko bread crumbs

1 1/3 cpimento cheese
-
olive oil for cooking
How To Make pimento cheese stuffed chicken

1Sprinkle chicken evenly with 1 teaspoon salt and 1/2 teaspoon pepper.

2Whisk together 1/2 cup milk and egg. Dip chicken in milk mixture and dredge in bread crumbs.

3Pour oil to a depth of 1/8 inch in a large skillet over medium-high heat. Cook chicken in hot oil about 10 minutes on each side or until done.

4Transfer chicken to a baking sheet. Hold chicken with tongs, and cut a slit in 1 side of each chicken breast to form a pocket. Spoon 1/3 cup pimento cheese into each pocket.

5Bake at 350° for 2 to 3 minutes or until cheese is melted. Garnish, if desired, and serve immediately.
