This recipe is called Picnic Chicken because it is just as good cold as it is hot. So it's good to take on a picnic. We used to take this with us when we went boating.8 hours of the prep time is marinating time!

Ingredients For picnic chicken

8 ozcarton sour cream

3 Tbsplemon juice

1 clovegarlic, large, minced

1/2 tspsalt

1/4 tspblack pepper

1/4 tsphot sauce

2 -3 lbassorted chicken pieces, skinned

2 csaltine crackers, crushed

2 tspdry mustard
-
2 tspdried thyme
-
1 tsppaprika
-
1/4 tspground red pepper
-
1/4 cbutter, melted
How To Make picnic chicken

1Combine the first 6 ingredients in a small bowl; stir well.

2Place the chicken in a large heavy-duty zip top plastic bag. Pour the marinade over the chicken and seal securely. Place the bag in the refrigerator and let marinate for 8 hours.

3Combine the cracker crumbs, mustard, thyme, paprika, and red pepper in a medium bowl; sitr well.

4Remove the chicken from the marinade. Dredge the chicken in the cracker crumb mixture. Place in a buttered 13 x 9 x 2 inch baking dish. Drizzle with the melted butter.

5Bake, uncovered, at 375 degrees for 45 to 50 minutes or until the chicken is done.
