I have also used boneless/skinless chicken tenders for this recipe. This recipe works well whether you prefer white or dark meat.

How To Make penny's spicy honey chicken
-
1Preheat oven to 400 degrees. Rinse and pat dry the chicken: place in roasting pan. I prefer to line with tin foil that has been sprayed with non-stick cooking spray.
-
2In a bowl, mix together the honey, chili powder, cumin, cayenne pepper, salt, and garlic powder. Place the chicken in the roasting pan. Using a spoon (or your hands), rub the honey mixture over the chicken. Drizzle chicken with the melted butter.
-
3Roast chicken uncovered in the preheated 400 degree oven for 10-15 minutes. Baste the chicken with the juices and cover with lid or tinfoil. Reduce heat to 350 degrees and roast until no longer pink and juices run clear(approximately 20-30 minutes). Time will depend on the cut of chicken pieces you choose to use.
