This is a simple and rather fast chicken recipe...we love the pecans and don't crush all of them real fine.

Ingredients For pecan-crusted chicken

  • 1 c
    toasted pecans
  • 1/2 c
    breadcrumbs
  • 1 tsp
    dried basil
  • 4
    chicken breast, boneless
  • 1/4 c
    honey mustard
  • 2 Tbsp
    olive oil

How To Make pecan-crusted chicken

    Preheat the oven to 400 degrees. Using a food processor, grind the pecans into fine crumbs. Transfer to a wide, shallow bowl and stir in the bread crumbs and basil. Season with salt and pepper. Rub each chicken breast with honey mustard, then coat with the pecan mixture.

    Place on a nonstick baking sheet and drizzle with 2 Tablespoons of olive oil. Bake until the juices run clear, about 20 minutes.
