This is one of my favorite recipes, it´s 100% mexican, family meal and traditional. You need to eat this delicious dish with fresh hand made corn tortillas. (I owe you the photos, I couldn´t find them)

Ingredients For peanut sauce chicken

5 lgchicken pieces, boiled and cooked (with salt and onion)

3 mdancho chiles, boiled

2 mdguajillo chiles, boiled

2 lgred tomatoes, roasted and peeled

1/2 smroasted onion
-
2 cloveroasted garlic
-
2clove
-
2black pepper
-
1 tspgrounded thyme
-
1 tspgrounded marjoram

2 lglaurel leaves

1/2 croasted peanuts (natural, not salted)

As neededsalt

As neededchicken broth or water
How To Make peanut sauce chicken

1Place in the blender: ancho chile, guajillo chile, tomatoes, onion, garlic, all the spices and peanuts. You´ll see a thick sauce. If it looks difficult to blend, add a bit of chicken broth or water.

2In a casserole, put some vegetable oil and add the sauce, it has to be thick and smooth, add water or chicken broth as needed (if so), and bring it to boil.

3Add the cooked chicken pieces in the sauce, and let them season for 5 minutes while the sauce is boiling.

4You can serve the chicken with white rice.
