Ingredients For peanut-crusted chicken skewers with dipping sauce

3/4 croasted peanuts, salted

1/2 cpanko bread crumbs

1/4 cfresh cilantro, chopped

salt & pepper to taste

28-oz. boneless, skinless chicken breasts, cut crosswise into 24 thin strips

3 Tbspvegetable oil

1/2 cmayonnaise

1-2 tspasian chili-garlic sauce
How To Make peanut-crusted chicken skewers with dipping sauce

1In a shallow dish, combine the peanuts, bread crumbs, cilantro and 1/2 tsp salt & pepper.

2Soak wooden skewers in water to prevent burning. Thread each chicken strip onto a skewer and then coat each strip in peanut mixture pressing gently to help the coating adhere.

3Heat the oil in a large nonstick skillet over medium-high heat. Cook in batches until golden brown - approx. 2-3 minutes per side. Add more oil as needed. Transfer cooked chicken to a plate.

4In a small bowl, combine the mayonnaise and chili-garlic sauce. Serve as a dipping sauce for the chicken.
