peanut chicken in pineapple boats

I've made this recipe 2 X now. Once when we first were married,then years later when I stumbled apon it again. I pulled out my CHICKEN recipe book tonight, and noticed a bookmark. Opened it up and discovered this recipe once AGAIN! A dish I thought tasted of India. The curry,peanut butter,and grapes make up this fresh tasting salad.

Ingredients For peanut chicken in pineapple boats

2chicken breasts, boneless and skinless,cut into bite sized pieces

2celery stalks,diced
-
8 ozfresh green seedless grapes

1/3 csmooth peanut butter
-
1 can20 oz. pineapple tidbits,drained
- FOR THE DRESSING

1/3 cpeanut butter, creamy
-
1/4 cmayonnaise
-
2 Tbspmilk
-
1 clovegarlic,finely diced

1 tspcurry powder
-
1 Tbspapricot preserves

salt and pepper
How To Make peanut chicken in pineapple boats

1Cook chicken in a nonstick skilet on med-high heat until no longer pink. Set aside. Combined Pineapple,chicken,celery and grapes in a bowl.

2Put all dressing ingredients into another bowl and mix with a wooden spoon or wisk until evenly blended. Season with salt & Pepper. (The dressing will be thick until thinned by the juices from the pineapple.)

3Add the dressing to the chicken mix.Fold together gently,but thoroughly. Sprinkle salted,coarsly chopped peanuts over the top before serving! You may hollow out a pineapple 1/2 or just serve it out of the bowl.
