1 lbboneless pork, cut in bite size pieces

1 Tbsptaco seasoning, more or less

2 Tbspvegetable oil

8 ozbottle chunky-style salsa

1 smred bell pepper, cut in thin strips

1/3 cpeach preserves
-
1/4 cpineapple juice , apple cider , orange juice or water

4 ccooked rice(i like jasmine)

1 Tbspchopped chives

1/8 tspsesame seeds

1Place pork pieces in a bowl; sprinkle taco mix over and toss well to coat all- use a little more if you like. Spray large skillet with non-stick spray- then heat oil in the skillet; over medium-high heat add pork pieces and cook to brown, stirring occasionally. Add salsa, pepper slices, juice and preserves to pan, lower heat. Cover and simmer for 10-15 minutes. Serve over prepared rice. sprinle with chives and sesame.
