Cooking from my roots. Paella is something people are afraid to try but in fact it's quite easy. You throw all the ingredients together and the end result is a meld of flavors and textures that leave you satisfied.

Ingredients For paella foil pack over grill

  • 1 c
    uncooked spanish rice
  • 1 1/4 c
    chicken broth
  • 6
    peeled large shrimp
  • 2
    skinless chicken thighs
  • 2 oz
    sliced dried chorizo
  • 1/4 c
    roasted red peppers, cut into strips
  • 1/4 c
    pimento olives
  • 1/2 tsp
    smoked paprika

How To Make paella foil pack over grill

  • 1
    Combine 1 cup uncooked Spanish rice mix, 1 1/4 cups chicken broth, 6 peeled large shrimp, 2 skinless chicken thighs, 2 ounces sliced dried chorizo, 1/4 cup each pimiento-stuffed olives and roasted pepper strips, and 1/2 teaspoon smoked paprika.

    Mix together and pour into a disposable pie pan. Drizzle with olive oil, salt & pepper to taste. Seal the pan in foil.

    Grill over medium-high heat, 30 minutes.
