oven fajitas
Can't remember when I first found this healthy recipe, perfect for a low carb and high protein diet. I have modified it over the years, but the key is the thick spice and olive oil mixture that coats all the chicken and veggies. You could also use steak. Also, it's one pan so clean up is very simple!

- SEASONING MIXTURE

1 1/2 Tbspchili powder

1 Tbsppaprika

1 tspsalt

1 tspblack pepper
-
1 tspgarlic powder

1 tspcumin
-
1 tspcayenne pepper

1 tspsugar

1 Tbspcornstarch
-
2 Tbspplus 2 tsp olive oil
- FAJITAS
-
1 lgonion, sliced julienne
-
2 mdgreen peppers, sliced
-
1 mdred pepper, sliced

1 lbchicken breast tenders
-
86-inch tortillas
- OPTIONAL

1/2 csour cream
-
1/4 ccilantro, chopped

1lime, cut into wedges
How To Make oven fajitas

1Preheat oven to 400 degrees F.

2In a small bowl, add and mix all of the dry ingredients for the seasoning.

3Stir in olive oil and mix until combined.

4Place the onions, peppers, and chicken in a 9×13” baking dish.

5Drizzle the spice and oil mix over the top. Using your hands, mix until everything is well coated.

6Bake for 35-40 minutes, stirring half way.

7Serve with tortillas, sour cream, cilantro and lime wedges, as desired.
