Can't remember when I first found this healthy recipe, perfect for a low carb and high protein diet. I have modified it over the years, but the key is the thick spice and olive oil mixture that coats all the chicken and veggies. You could also use steak. Also, it's one pan so clean up is very simple!

Ingredients For oven fajitas

  • SEASONING MIXTURE
  • 1 1/2 Tbsp
    chili powder
  • 1 Tbsp
    paprika
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • 1 tsp
    garlic powder
  • 1 tsp
    cumin
  • 1 tsp
    cayenne pepper
  • 1 tsp
    sugar
  • 1 Tbsp
    cornstarch
  • 2 Tbsp
    plus 2 tsp olive oil
  • FAJITAS
  • 1 lg
    onion, sliced julienne
  • 2 md
    green peppers, sliced
  • 1 md
    red pepper, sliced
  • 1 lb
    chicken breast tenders
  • 8
    6-inch tortillas
  • OPTIONAL
  • 1/2 c
    sour cream
  • 1/4 c
    cilantro, chopped
  • 1
    lime, cut into wedges

How To Make oven fajitas

    Preheat oven to 400 degrees F.

    In a small bowl, add and mix all of the dry ingredients for the seasoning.

    Stir in olive oil and mix until combined.

    Place the onions, peppers, and chicken in a 9×13” baking dish.

    Drizzle the spice and oil mix over the top. Using your hands, mix until everything is well coated.

    Bake for 35-40 minutes, stirring half way.

    Serve with tortillas, sour cream, cilantro and lime wedges, as desired.
