Ingredients For oven chicken and potatoes

    boneless skinless chicken breast, chopped
  • 1 sm
    onion, chopped
  • 2 tsp
    minced garlic
  • 1 tsp
    basil
  • 1/2 tsp
    oregano, dried
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 5
    potatoes cut into small wedges
  • 5
    carrots cut into small wedges
  • 2 Tbsp
    oil (vegetable, canola type)

How To Make oven chicken and potatoes

    Preheat oven 400 degrees.

    Combine onion, oil, garlic, basil,oregano, salt and pepper.

    Pour 1/2 of the mix over potatoes and carrots. Mix until potatoes and carrots are evenly coated.

    Put chicken in a bowl, put other half of mixture over it. Mix until all the chicken is evenly coated.

    Mix chicken with potatoes and carrots.

    Put in a greased 9 x 13 baking pan.

    Cover with aluminum foil. Bake at 400 for 45 - 60 minutes or until chicken is done and potatoes are soft. Take off foil last 15 minutes to brown a little.
