I've been making this recipe for over 40 years, and my family never tires of it. It is so simple, so easy - it is my last-minute "go to" when I have failed to plan ahead. It is by far my most-requested casserole among my family and friends. Hope you love it as much as we do!

How To Make okie style king ranch chicken
-
1NOTE: For the chicken, I usually saute 2 large or 3 medium boneless chicken breasts in a small amount of oil until they are cooked through and a little brown on both sides. While they are cooking, season with plenty of garlic powder, salt and pepper. As a time-saver, you can also dice up a store-bought rotisserie chicken or use a bag of the pre-cooked chicken fajita strips.
-
2Preheat over to 375 degrees
-
3Prepare a 9 x 13 casserole dish with cooking spray or use some other method to prevent sticking.
-
4In a large mixing bowl, mix all ingredients except the cheese and chips. Stir with a large spoon until smooth and creamy.
-
5Next, crumble the tortilla chips with your hands and add to the mixture. Stir gently until chips are distributed throughout.
-
6NOTE: I've never actually measured the chips, but out of a 16 oz bag, I usually crumble up about 3/4 of the bag. Also, leave the chips in fairly large pieces (where a chip is broken into half or thirds). But don't worry too much about this step, this casserole is very forgiving.
-
7Pour mixture into casserole dish and cover with foil. Bake for 35-40 minutes (until mixture is bubbling in the center).
-
8Remove foil and cover with cheese. Return to oven and bake another 10 minutes, or until cheese is bubbling and just beginning to brown.
-
9Allow casserole to "set" for 10-15 minutes before serving. Top individual servings with sour cream, sliced avocado, guacamole and/or your favorite salsa or pico. Or be like me and just eat it all by it's delicious self.
