one pot parmesan italian herbed chicken and rice
This is a flavorful one pot chicken and rice meal. I used different Italian seasonings with chicken thighs, onions, mushrooms, and Jasmine rice, to achieve a flavorful, and savory rice dish. It screams mediterranean flavor. I added Parmesan cheese to bring in all together. I hope you enjoy my delicious comfort meal. From my kitchen to yours. Enjoy

Ingredients For one pot parmesan italian herbed chicken and rice

1large yellow onion chopped

1 cchopped mushrooms
-
2 Tbspbutter
-
2 Tbspolive oil
-
2 lbboneless skinless chicken thighs cut into strips

2 clovepressed or grated fresh garlic
-
1 tspdried basil
-
1/4 tspdried thyme
-
1/2 tspdried oregano
-
1/2 tspdried parsley
-
1/4 tspsalt
-
1/4 tspblack pepper or about 10 turns on pepper grinder

1/2 tspchicken bouillon powder
-
21/4 cchicken stock divided (not broth)

1 cjasmine rice
-
5 ozfrozen sweet peas
-
1 cshredded parmesan cheese loose packed

more salt and pepper to taste
How To Make one pot parmesan italian herbed chicken and rice

1On medium high heat. Melt butter and olive oil together.

2Add chopped onion and s mushrooms. Cook about 5-10 minutes until browned. Stir occasionally.

3Reduce temperature to low heat. Cut each thigh into 4 pieces. Add to onions and mushrooms.

4Add chicken. Season chicken with all of the herbs salt and pepper.

5Cook on medium high until thighs are browned and nearly cooked through.

6With a spatula or spoon. Push chicken aside slightly add the garlic to pan.

7Cook Garlic approximately one minute or until fragrant. Do not Brown. Stir together with chicken.

8Add 2 cups chicken stock and rice to pot. Stir well. When it begins to boil. Cover pot and reduce heat to simmer.

9Simmer 15-20 minutes or until all stock is absorbed into rice.

10Add 1/4 cup of additional chicken stock to chicken and rice. Stir in frozen pleas. Cover. Simmer about 3-5 minutes.

11Stir in parmesan cheese. Shut the heat off and cover.. let sit 5 minutes. Taste. Mix in more salt and pepper if needed according to your taste.
