Ingredients For ole chicken salad

  • 4 c
    torn boston lettuce
  • 1/2 c
    reduced-fat, shredded monterey jack cheese, or mexican-style cheese
  • 1 c
    black beans, drained
  • 1-1/2 c
    cooked, chopped chicken
  • 2
    tomatoes, cut into thin wedges
  • 1 c
    shredded carrots
  • 1/2 c
    pitted, sliced black olives
  • 1/2 c
    light mayonnaise
  • 1
    4 oz can green chiles, chopped
  • 1-1/2 tsp
    chili powder
  • 1 tsp
    minced garlic
  • 3/4 c
    crushed tortilla chips

How To Make ole chicken salad

  • 1
    Place torn lettuce in lg serving bowl. Layer w/ cheese, beans, chicken. tomatoes, carrots and olives.

    Spread mayonnaise, chiles, chili powder and garlic over lettuce mix. Stir gently to coat.

    Cover salad and refrigerate for 4 hrs. Sprinkle w/ tortilla chips and serve.
