During our once-a-month girl's get-together, I wanted to serve something light, refreshing, yet filling. This sandwich holds a zesty, fresh taste that has now become a request (or demand?) to many different occassions. And...it is ok to make it just for yourself, too! Enjoy!

Ingredients For not-your-average-chicken-salad-sandwich

  • 1/2 c
    ranch dressing
  • 1/4 c
    dijon-style mustard
  • 1 tsp
    lemon zest
  • 1/2 tsp
    seasoned salt
  • 1/4 tsp
    fresh ground black pepper
  • 2 c
    cubed, cooked chicken
  • 1/2 c
    crumbled, cooked bacon
  • 1/2 c
    cubed swiss cheese
  • 1/2 c
    chopped sweet red pepper
  • 1/2 c
    halved green grapes
  • lettuce leaves
  • 6
    good-quality croissants, split

How To Make not-your-average-chicken-salad-sandwich

    In a large bowl, combine dressing, mustard, zest, salt, and pepper. Add chicken, bacon, cheese, red pepper, and grapes. Gently mix until well-blended.

    Place a lettuce leaf on the bottom half of each croissant. Top each leaf with an equal amount of chicken mixture. Top mixture with remaining croissant halves. Serve and enjoy!
