This sweet and salty dish reminds me of a garlicky oniony bagel but it’s totally teriyaki chicken!

    chicken breasts, boneless and skinless
  • 8
    carrots, peeled and cut
  • 1/2 c
    soy sauce
  • 1/4 c
    Mirin
  • 1/4 c
    fresh-squeezed lemon juice, approx. 1 lemon
  • 1/2 c
    brown sugar, lightly packed
  • 2 clove
    garlic, minced
  • 2 tsp
    freshly-grated ginger
  • 1/4 tsp
    black pepper
  • 4 c
    white rice, steamed

How To Make not-everything-is-a-bagel teriyaki chicken

    First, slice the chicken into small, bite-sized pieces.

    Next, sear it in a few drops of sesame oil and a pat of butter.

    Third, carrots and a splash of water. Steam a few minutes or until carrots are tender.

    In a glass bowl, combine soy sauce, Mirin, lemon juice, brown sugar, minced garlic, grated ginger, and black pepper.
