I wanted to do something really special for the most important woman in my life's birthday. That special lady is my mama, Nancy Adams. She is one of the sweetest people you will ever meet. She is my hero! She set the example for my brothers, sisters and I. She taught us to always be humble, genuine, treat others the way you want to be treated, the true meaning of unconditional love, faith, honesty, integrity and so much more. She is my inspiration and I love her dearly. For this weeks sandwich challenge in the group Sandwiches, Sammiches & Sammies, I ask the group to create a diabetic friendly sandwich with the mystery ingredients chicken sausage & asparagus honoring her 70th birthday November 2nd. Ingredients For my mama nancy's birthday pizza sammich

  • 1 pkg
    naan wholewheat flat bread
  • 6 oz
    chicken sauage sliced & fully cooked
  • 12 md
    white asparagus spear, washed and trimmed
  • 2 Tbsp
    red bell peppers, sliced
  • 1 md
    shallot, sliced
  • 20-26 sm
    yellow cherry tomatoes
  • 6 lg
    basil fresh leaves, torn
  • 1 Tbsp
    granulated garlic, divided
  • 4 oz
    whole milk mozzarella cheese, sliced
  • 2 oz
    parmesan cheese, shaved
  • 1/4 c
    goat cheese, herb
  • 2 Tbsp
    olive oil, extra virgin
  • salt and pepper, to taste

How To Make my mama nancy's birthday pizza sammich

    gather ingredients
  • 2
    in a small bowl, combine goat cheese and 1/2 of the olive oil. mix well
  • 3
    season veggies with remaining olive oil, salt & pepper and garlic. in a skillet on grill pan, saute veggies (except tomatoes) until soft. remove veggies from pan. fry sausage slices until golden brown. Remove from pan. Roast the tomatoes in a 400 degree oven for 10 minutes or until tomatoes begin to burst. remove from pan.

    on an oven proof pan, spread goat cheese mixture, slices of mozzarella cheese on flat bread. add chicken sausage, asparagus spears, red peppers, shallots.

    add tomatoes, you can sorinke some italian seasoning on top

    add more mozzarella cheese & parmesan cheese. top with more torn basil

    preheat oven to 400 degrees. bake pizza for 10 minutes or until cheese melts. slice and enjoy!
