I've been making this recipe for years. It is a wonderful dish that your family will love. Each hen half gets a lovely bed of delicious rice to accompany it and all you need is a side salad or green vegetable to complete your dinner. Definitely Company Worthy. : )

Ingredients For my favorite cornish hens & wild rice

1 box6 oz. box long grain and wild rice

1envelope italian salad dressing mix

2 12 cboiling water
-
1 can10.5 oz. can cream of chicken soup

2cornish hens, sliced in half lengthwise

salt and pepper to taste
How To Make my favorite cornish hens & wild rice

1Spread rice evenly in a 3 qt. baking dish - bake at 375 degrees for 15 minutes, stirring occasionally until golden.

2Combine the dressing mix with the boiling water and soup. Stir mixture into the rice.

3Place split cornish hens, cut side down, on top of rice. Cover dish tightly with foil and bake at 350 degrees for 1 hour.

4Uncover the dish and bake an additional 30 minutes until the rice and hens are tender and brown.
