My son Devin is a real foodie and LOVES to be with me in the kitchen. He decided he was going to make an Italian style chicken. This is HIS recipe. The only thing I do is supervise and make sure he follows food safety and doesn't burn or cut himself. He is very excited about me posting it. He hopes you enjoy it.

Blue Ribbon Recipe

This is a fantastic chicken dinner recipe. The Italian chicken is full of flavor from all the fresh ingredients. Fresh herbs and veggies are what make this so yummy. We were a little concerned there may not be enough seasoning but were we pleasantly wrong. We tested it over pasta and with just a bit of fresh Parmesan, it was a delicious dinner.

Ingredients For my 10 year old's chicken

    split chicken breasts ribs removed
  • 2
    chicken legs
  • 2
    chicken thighs
  • 1/4 c
    olive oil, extra virgin
  • 1
    yellow bell pepper sliced
  • 1
    green bell pepper sliced
  • 1
    red bell pepper sliced
  • 10 oz
    fresh mushrooms sliced
  • 1
    large sweet onion sliced and quartered
  • 1 Tbsp
    fresh thyme, leaves only
  • 1 Tbsp
    minced roasted garlic
  • 1 Tbsp
    heaping, fresh oregano chopped
  • 1 Tbsp
    fresh basil leaves chopped
  • 2 tsp
    garlic salt
  • 1/4 tsp
    black pepper
  • 1 c
    chardonnay
  • 2 can
    14.5 ounces each diced tomatoes
  • 1 can
    14.5 ounces tomato sauce
  • 1 Tbsp
    fresh flat leafed parsley chopped
  • 2 Tbsp
    heaping, capers
  • Parmesan cheese

Test Kitchen Tips
Even in the Test Kitchen, we make mistakes. If you look closely at the photos, we added a bit of the fresh parsley in step 4, not step 6. We realized the mistake and added the rest with all the other herbs later. This recipe is very forgiving.

    Preheat oven to 375 degrees.
  • Heating oil in a Dutch oven.

    In a large Dutch oven, put your olive oil and heat over medium heat.
  • Browning chicken pieces in Dutch oven.

    Brown chicken pieces, then remove.
  • Adding mushrooms, peppers, and onions to Dutch oven.

    In the same Dutch oven, add peppers, onions, mushrooms, minced garlic, garlic salt, and pepper.
  • Cooking vegetables until they get soft in Dutch oven.

    Cook until starting to get soft. About 10 minutes.
  • Adding fresh herbs to vegetables.

    Add all fresh herbs, omitting the capers.
  • Adding tomatoes and water to Dutch oven.

    Add diced tomatoes, tomato sauce, wine and stir.
  • Place browned meat back into pan.

    Place browned chicken back in the Dutch oven. Cover and place in a 375-degree oven for 1 hour.
  • Adding capers prior to serving.

    5 minutes before serving add capers and stir in.
  • Parmesan cheese added to the top.

    Top with Parmesan cheese.
  • Chicken served with pasta.

    Goes great with noodles or rice and garlic bread. Enjoy
