I made this one night when I had fresh broccoli, but nothing to do w/ it. But I had a pizza crust and other ingredients, so, I made this. It was delicious! I was in the mood for pizza anyway!!

Ingredients For mushroom, broccoli and chicken pizza w/ ricotta cheese

  • 1 Tbsp
    butter
  • 1
    bonelss, skinless chicken breast, cut into bite-size pieces
  • 1
    8 oz container low-fat ricotta cheese.
  • 1 Tbsp
    butter
  • 1 tsp
    garlic powder
  • 1 tsp
    dried oregano
  • 1/4 tsp
    salt and pepper to taste.

    boboli pizza crust
  • 1/2 c
    chopped broccoli florets
  • 1
    3 0z can sliced mushrooms, drained.
  • 2 c
    reduced-fat, shredded mozzarella cheese.

How To Make mushroom, broccoli and chicken pizza w/ ricotta cheese

    Heat oven to 325. Place crust on lg baking shet. Melt 1 tbsp butter in lg skillet over medium heat. Cook chicken until browned. In microwave-safe bowl, combine, ricotta, 1 tbep butter, garlic powder, oregano, salt & pepper. Microwave on high for 1 min. Stir to combine. Spread ricotta mix evenly over crust. Sprinkle evenly w/ mozzarella cheese. Arrange chicken, broccoli, and mushrooms evenly over cheese. Bake 30 min, or until cheese melts.
