Ingredients For mozzarella chicken breast and potatoes

  • 4
    boneless skinless chicken breast
  • salt and pepper
  • paprika
  • 4 clove
    garlic, minced
  • 4 oz
    butter, cut into 4 pieces
  • olive oil
  • 2 md
    shallots, small dice
  • 4 md
    potatoes, peeled and cut into small cubes
  • 1 c
    shredded mozzarella cheese
  • 1/2 c
    fresh parsley, chopped
  • 1/4 c
    heavy cream

How To Make mozzarella chicken breast and potatoes

    Cut the chicken breasts half way through from top to bottom. Open each breast up. Season with salt, pepper, and paprika. Spoon a small amount of garlic into each opening. Top with 1 oz butter each.

    Add olive oil to a pan. Once hot, sear the chicken on non cut side first, then turn over and sear on the other side, about 5 minutes per side. Remove chicken to a plate.

    Add the shallots and potatoes to the pan. Season with salt and pepper and cook about 10 minutes, stirring often.

    Mix the mozzarella cheese, parsley, and heavy cream together. Add the chicken back to the pan on top of the potatoes, cut side up.

    Top each one with some of the mozzarella mixture. Cover and cook about 5 more minutes until cheese is melted.

    Serve with potatoes and veg if desired.
