This unique dish has a very delicate flavor and smells wonderful while cooking. A friend shared this with me many years ago and I have enjoyed making it for a long time and I have not changed a thing in the recipe.

Ingredients For moroccan inspired chicken

4chicken breasts with skin, halved

2/3 cflour
-
1 tspsalt

dash pepper
-
vegetable oil
-
1 Tbspcinnamon

1 can1 lb.apricot halves in syrup

1/4 corange juice
-
1 Tbspbrown sugar

2 Tbspsoy sauce
How To Make moroccan inspired chicken

1Mix flour, salt, pepper and cinnamon in large bowl, coat chicken on skin side. Heat oil in skillet, cook chicken a few pices at a time, skin side down until golden brown. Drain on paper toweling. Pour juice of apricots into measuring cup add orange juice until it equals one cup. Add brown sugar and soy sauce. Reserve apricots. Drain oil from skillet. Arrange chicken in pan, skin side up and pour liquid over chicken. Simmer, covered 30 minutes. Add apricots and simmer 5 more minutes. Serve over hot rice.
