mom's old time chicken & ritz casserole
This was a staple in our house when I was growing up. We were quite poor & so these kinds of casseroles were a mainstay because of the low cost, since they could feed many on little. But they DID taste so good & that's why I now make them, poor or not!

Ingredients For mom's old time chicken & ritz casserole

1 stickmelted butter

1 critz crackers, crumbled

3chicken breasts, boneless and skinless

8 ozsour cream
-
1 cancream of chicken soup
-
salt & pepper to taste
-
1-1/2 cfrozen peas
-
1/4 cchicken broth
-
1 boxpenne pasta
How To Make mom's old time chicken & ritz casserole

1heat oven to 350. Pour melted butter in bottom of casserole dish. Sprinkle 1/2 cup of the Ritz cracker crumbs over butter. In medium pot, boil pasta until almost done, drain.

2Place chicken breasts over the butter and crumbs. Spoon pasta over chicken. Season chicken and pasta w/ salt & pepper. Pour frozen peas over chicken.

3In medium size bowl, whisk sour cream, soup and broth until combined. Pour over chicken. Sprinkle remaining Ritz cracker crumbs over chicken. Bake 1 hr or until bubbly.
