This started out as something Mom made up one night years ago and turned into a family favorite that is just as popular with her son's in-law and grandkids as it was with us kids. This recipe is very versatile, easy and fun to make. My kids always like to help make it. It makes a lot, but the leftovers never last long! Hope your family loves it too! :) (photo is a web photo)

How To Make mom's chicken chicken salad

  • 1
Ingredients: 4 cups cooked chicken, diced or shredded 1 2lb box macaroni noodles 2 cans medium black olives, chopped 6 stalks celery, diced 1 cup mayonnaise Seasonings to taste: Garlic powder Onion powder Salt Pepper

    1. Cook pasta to desired tenderness. Drain well. 2. Combine all ingredients in a large bowl and mix well (add more mayo if desired). 3. Season to taste and serve immediately. (This is good warm or cold but we always liked it best when the noodles were fresh out of the pot.) 4. Some variations we've tried over the years: add 1 cup finely diced sweet onions. Mix one package ranch dressing mix with the mayo. Use leftover Thanksgiving turkey instead of chicken. I like mine with lots of celery and olives so can always add more if you'd like.
