I got this Cuban dish from a cooking session held at a local market and I love it!

Ingredients For mojo chicken
- MOJO SAUCE

1/2 colive oil
-
8 lgcloves garlic, cut into thin slices

2/3 corange juice, fresh & sour
-
1/2 cwater
-
1 tspground cumin
-
1 tspdried oregano
-
1 tspsalt (or to taste)

3 Tbspfresh chopped cilantro
- MOJO CHICKEN

1 lbchicken wings, legs or thighs

1/2 cmojo sauce
-
1 tspgarlic powder
-
salt & pepper to taste
How To Make mojo chicken

1Mojo sauce: Heat oil in a deep sauce pan over medium heat. Add the garlic & cook until fragrant & pale golden brown, 1-2 minutes. Do not let garlic brown too much, it will become bitter. Stir in the sour orange juice, water, & dried spices. Sauce may spatter so be careful. Bring to a rolling boil, taste for seasonings adding salt & pepper as needed. Let Cool to room temp, then stir in fresh cilantro. (If not using sauce right away, transfer to a jar with tight fitting lid, store in fridge and shake well before serving).

2Pour mojo sauce over chicken pieces and marinate in refrigerator for at least 4 hours. Drain excess sauce and add garlic, salt and pepper. Bake at 325 until chicken is done. Serve with rice (I save out a little sauce before marinating the chicken to pour over the rice).
