I love pecans, so I was wondering how chicken rolled in pecans would taste..they taste moist and fabulous!

Ingredients For moist pecan chicken

    egg, lightly beaten
  • 1 c
    ground or coarsely chopped pecans
  • 3/4 c
    bread crumbs
  • 2 tsp
    paprika
  • 1/2 tsp
    salt
  • 1/8 tsp
    pepper
  • 1/2 c
    flour
  • 8
    boneless, skinless chicken breasts
  • 1/3 c
    melted butter
  • 1 c
    buttermilk
  • 1/4 c
    chopped pecans

How To Make moist pecan chicken

    Heat oven to 350. Spray a lg rimmed baking sheet w/ cooking spray. In lg shallow dish or bowl, combine buttermilk and egg. In another shallow dish, combine 1 cup pecans, bread crumbs, paprika, salt and pepper.

    Place flour in another shallow dish. Dredge each chicken breast in flour, dip in buttermilk mix, then roll in pecans to coat evenly.

    Place chicken on baking sheet. Drizzle w/ melted butter. Sprinkle w/ remaining ecans. Bake, uncovered about 20 mins, or until juices run clear.
