Everyone probably has their own version of this recipe. This just happens to be the one that my mom made and passed down. I haven't had it in a while. I am going to have to change that soon.

Ingredients For mimi's mexican chicken
- CASSEROLE INGREDIENTS

1 bagdoritos, any flavor or plain tortilla chips are good, too

1chicken, boiled saving the broth

1 mdonion, chopped

2 cgrated cheese (or more lol)
- SAUCE INGREDIENTS

1 cancream of mushroom soup

1 cancream of celery soup

2 cchicken broth
-
1 canro-tel, diced tomatoes with green chiles
How To Make mimi's mexican chicken

1Preheat oven to 350. Butter a 13 x 9 pan. After boiling chicken let cool and pick meat from bones. Chop into bite-sized pieces.

2Layer casserole ingredients in the prepared pan in the order listed.

3Mix together all sauce ingredients and pour over casserole ingredients in pan. Bake in the oven until bubbly around the edges. Top with more cheese if desired and return to oven to melt. Adjust consistency by adding more chicken broth if desired.
