Ingredients For mickey's hawaiian chicken

  • 1 bottle
    russian salad dressing
  • 1 jar
    apricot preserves
  • 1 pkg
    dry onion soup mix
  • 1 can
    pineapple, chunks, drained but reserve juice
  • boneless & skinless chicken pieces (whatever piece you enjoy - i use thighs for this recipe)
  • minute rice (to serve on)
  • 1 can
    coconut milk, unsweetened (optional)
  • 2 - 3 c
    coconut, shredded (optional)
  • 1 c
    macadamia nuts, chopped (optional)

How To Make mickey's hawaiian chicken

    Preheat oven to 350 degrees F.

    Mix first four ingredients together.

    Greas 9 x 13" baking dish. Place chicken in dish & pour mixture over chicken. Bake 1 1/4 hours.

    Make rice, but with reserved pineapple juice, coconut milk & enough water to cook rice according to directions.

    When serving sprinkle with coconut & macadamia nuts.
