Ingredients For michael douglas' chicken parmigiana

3 1/2 lbchicken, cut into pieces

salt and pepper, to taste

4 Tbspbutter or olive oil

1 cmushrooms, sliced

1green bell pepper, cored, seeded, and finely chopped

1/2 cfinely chopped onion
-
1 clovegarlic, finely minced
-
2 ctomatoes, peeled, seeded, and chopped

1/2 cdry vermouth
-
1/2 cstuffed olives, sliced
-
4 Tbspgrated Parmesan cheese

1Preheat the oven to 350 degrees F.

2Sprinkle the chicken with salt and pepper and brown on all sides in the butter.

3Sprinkle with the mushrooms and cook for 5 minutes.

4Add the green pepper, onions, garlic, tomatoes, and vermouth.

5Cover tightly and bake for 30 minutes.

6Add the olives and cook for 10 minutes longer.

7Serve with grated cheese.
