1bell pepper, diced

1 ccarrots, diced

1 candiced tomatoes with green chiles

1 canblack beans, drained and rinsed

4 cchicken broth

3 cfrozen corn

2 tspchili powder

1 Tbspground cumin

1/4 tspcayenne pepper

1/4 tspsalt

2-3 cshredded cooked chicken
How To Make mexican chicken soup - slow cooker

1Stir all ingredients except chicken together in slow cooker. Cover, and cook on low for 5-7 hours.

2Stir in chicken and cover. Continue cooking for 1 hour.

3Total cooking time: 6-8 hours

4Notes: *"Gluten free" - as long as broth and chili powder are gluten free Omit the chicken (double up on the beans) and use vegetable broth for a vegetarian version of this soup.
