A friend from Arizona gave me this recipe when I was talking to him about mexican one dish meals, he found it in his local newspaper. So far everyone who has tried it loves it and requests the recipe. I will add pictures next time I make it.

Ingredients For mexican chicken lasagna

  • 5-6
    chicken breasts, boneless and skinless, cooked and shredded
  • 1 can
    cream of chicken soup
  • 1 can
    cream of mushroom soup
  • 1 md
    onion, diced
  • 1 lg
    green pepper, diced
  • 1 sm
    can green chilis
  • 1 tsp
    each of cumin, cilantro, garlic powder, chili powder,flake red pepper
  • 1 pinch
    salt and pepper
  • 1 c
    salsa
  • 6-8 oz
    cheddar cheese, shredded
  • 6-8 oz
    monterey jack cheese, shredded
  • 6-8 lg
    flour tortillas

How To Make mexican chicken lasagna

    Preheat oven 350 Spray lasagna pan with nonstick

    Mix first 6 ingredients in bowl then add all herbs and spices, mix well.

    Put a very thin layer of salsa on bottom of lasagna pan, then layer 2 flour tortillas over complete bottom of pan, layer about 1/2 cup of chicken mixture and cheeses then salsa again, keep repeating and end the last layer with cheese layer.

    Cover pan with foil and bake 30 minutes, remove foil and bake another 30 minutes or until top is slightly browned.
