After much searching, I think I finally found a Mexican casserole that is really quick and yummy!!!

Ingredients For mexican chicken casserole

  • 1-1 1/2 lb
    boneless chicken breast (shred into pieces)
  • 1 c
    chicken broth
  • 1 can
    cream of mushroom soup
  • 1 can
    cream of chicken soup
  • 1 can
    rotel
  • 1 lb
    velveeta cheese
  • 1 md
    onion minced
  • 3/4
    bag of regular cheese doritos

How To Make mexican chicken casserole

  • 1
    In sauce pan, mix broth, soups, rotel and velveeta together until melted consistently.

    In baking dish, spray with cooking spray, layer Doritos, chicken shreds and minced onion. Pour half mixture from sauce pan and then repeat.

    Bake at 350 degrees for 40-45 minutes.
