Ingredients For mexican chicken and rice

  • 6
    medium boneless chicken breasts
  • 1 box
    zateran's spanish rice mix
  • 1 can
    14 oz. diced tomatoes with green chilies
  • 1 3/4 c
    water
  • 1 Tbsp
    butter
  • 2 Tbsp
    olive oil, light
  • 1 can
    sliced black olives, optional
  • 2
    roma tomatoes,, diced
  • 1 pkg
    shredded cheddar cheese

How To Make mexican chicken and rice

  • 1
    heat oil and butter in large skillet. Brown chicken breasts in oil until lightly browned on both sides. Add Rice mix and 1 1/2 cups of water, diced canned and fresh tomatoes. Mix to make sure all rice is in water. Let simmer til rice is cooked thoroughy covered on low heat,stirring occasionally, add extra 1/4 c water if necessary.Just before serving, add olives. Serve with Cheese on side at table. Great with warmed pita bread!
