Ingredients For mexican chicken (aka: roadrunner stew)

    chicken, boned
  • 1 can
    cream of chicken soup
  • 1 lg
    onion, chopped
  • 10 oz
    cheese, grated
  • 1 can
    cream of mushroom soup
  • 1 c
    chicken broth
  • 1 pkg
    tortillas
  • 1 can
    rotel tomatoes

How To Make mexican chicken (aka: roadrunner stew)

    Cook onions in butter. Add soups and tomatoes, simmer for a few minutes.

    In a 9x13" pan or baking dish place a layer of tortillas, a layer of cooked chicken and half the liquid. Repeat layers and top with grated cheese.

    Bake at 350 degrees for about 20 minutes or until bubbly.
