My family loves this in individual foil packets and cooked on the grill but it works just as well in a casserole pan and cooked in the oven

Ingredients For mexican chicken

  • 4
    boneless chicken breast
  • 1 can
    chili beans
  • 1 can
    whole kernel corn
  • 1 c
    salsa
  • season salt and pepper to your liking
  • 1 c
    shredded cheese, we use cheddar

How To Make mexican chicken

  • 1
    Season chicken breast and place in a casserole pan,( or you can place 1 breast on a piece of foil
  • 2
    Mix Corn, salsa, and beans together. Pour over the chicken in the casserole pan (or divide four ways and put it on top of each piece of chicken)
  • 3
    Place in oven at 350 degrees for approx 45 min. (Make a pouch out of each piece of foil and place on grill until chicken is done)
  • 4
    Once chicken is done you sprinkle the cheese over the mixture and let it sit in oven (grill) until the cheese melts. Serve with rice and a salad.
