My family loves this in individual foil packets and cooked on the grill but it works just as well in a casserole pan and cooked in the oven

Ingredients For mexican chicken

4boneless chicken breast
-
1 canchili beans
-
1 canwhole kernel corn
-
1 csalsa
-
season salt and pepper to your liking

1 cshredded cheese, we use cheddar
How To Make mexican chicken

1Season chicken breast and place in a casserole pan,( or you can place 1 breast on a piece of foil

2Mix Corn, salsa, and beans together. Pour over the chicken in the casserole pan (or divide four ways and put it on top of each piece of chicken)

3Place in oven at 350 degrees for approx 45 min. (Make a pouch out of each piece of foil and place on grill until chicken is done)

4Once chicken is done you sprinkle the cheese over the mixture and let it sit in oven (grill) until the cheese melts. Serve with rice and a salad.
