10 ozroasted red peppers, drained

1 tspbasil, dried

How To Make mediterranian inspired chicken thighs

1Rinse and pat dry chicken thighs. Season with salt and pepper to taste.

2Heat roasting/baking pan and put a few tablespoons of olive oil in it. Sear chicken thighs skin side down until golden.

3Flip chicken over and turn off the heat.

4With chicken skin side up, add potatoes, peppers, garlic, oregano, and thyme. Drizzle with olive oil.

5Bake your meal in 400 oven for 45 to 55 minutes or until chicken is done and potatoes are tender.
